
Sesame Oil Noodle Salad

Ingredients
- 3 tbsp bibigo Sesame Oil
- 150 g noodles (e.g. egg noodles)
- 1 carrot, shaved into long ribbons
- 1 red bell pepper, thinly sliced
- 2 spring onions, sliced lengthwise
- 1 red chilli, chopped
- 1 tbsp peanut butter
- 1–2 tsp soy sauce
- 1 tsp vinegar (rice or white vinegar)
- Salt to taste
Instructions
Cook the noodles according to the package instructions and rinse briefly under cold water.
In a bowl, mix peanut butter, bibigo Sesame Oil, soy sauce, vinegar, and chopped chilli until smooth.
Add the noodles, carrot ribbons, sliced peppers, and spring onions and toss well.
Adjust seasoning with soy sauce or salt if needed and serve.
